Lori’s Creamy Asparagus Soup


1 pound fresh asparagus, trimmed and cut into pieces

1/2 cup chopped onion

1- 14.5 oz can chicken broth

2 tablespoons butter

2 tablespoons flour

1 teaspoon salt

Pinch black pepper

1 cup milk

1/2 cup sour cream

1 teaspoon lemon juice



In a large saucepan, combine asparagus, onion, and 1/2 cup chicken broth. Cover over high heat until boiling. Reduce heat, and simmer uncovered until asparagus is tender. Transfer mixture to blender and puree. Set aside. In the same saucepan, melt butter over medium-low heat. Stir in flour, salt, and pepper. Cook, stirring constantly for 2 minutes. Whisk in remaining broth, and increase the heat to medium, stirring constantly until mixture boils. Stir in asparagus puree and the milk. Put the sour cream in a small bowl, and stir in a cup of the hot soup to warm sour cream. Add sour cream and lemon juice to the soup. Continue stirring until the soup reaches serving temperature. Serve immediately.
