Dana’s Avocado Deviled Eggs


One dozen Large eggs

½ cup Mayonnaise

2 tbs Lemon juice

1tbsp Yellow mustard

¼ tsp Salt

¼ tsp Ground black pepper

1 large Avocado, diced


Bring a large saucepan full of water to a boil and add eggs. Reduce heat and cook on a low boil for 10 minutes. Drain and set aside to cool. Remove shells and slice each egg in half lengthwise. Place yolks in a food processor and place whites cut-side up on a platter. Add remaining ingredients to yolks in food processor and process until well blended and smooth. Using a pastry bag, pipe mixture into egg white shells and refrigerate until ready to serve.
