1 pound Brussels Sprouts, trimmed and halved
3 tablespoons Extra Virgin Olive Oil
4 slices bacon
1 tablespoon Apple Cider Vinegar
2 Teaspoons Dijon Mustard
1 teaspoon Honey
Preheat oven to 450 degrees. Line a baking sheet with aluminum foil and place brussels sprouts on baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt. Bake for 25 minutes. Meanwhile, in a large skillett, heat 1 tablespoon olive oil over medium heat and cook bacon until browned. Drain bacon, crumble and set aside. To make dressing, add 1 tablespoon olive oil and 1 tablespoon apple cider vinegar to skillet. Removed from heat and whisk in honey and mustard. Transfer BrusselssSprouts to serving dish, drizzle with dressing and sprinkle with bacon.
