Chris’ Spinach and Egg Casserole


1 tablespoon olive oil

8 oz fresh spinach

1 med. onion, chopped

1 teaspoon Italian seasoning

1/2 teaspoon salt

10 eggs

1 cup milk

1/2 cup fresh mushrooms, chopped

1/2 cup green bell peppers, chopped

Grated cheese



Preheat oven to 350 degrees. Grease 9X13 pan. Saute onion and spinach in a pan with olive oil and salt until spinach is half the original size or less. Add Italian seasoning and stir. Set aside mixture to cool. In a bowl, whisk eggs, and milk together and then add spinach mixture to egg mixture. Pour into cooking dish and top with grated chees. Bake for 45 minutes until top is brown. Let cool 10-15 min before serving.
